Hey everyone! Just a quick little recipe today to share with you one of my very favorite ways to eat toast. Avocado toast. With the probiotic goodness of blue cheese. And the crunch of buttery walnuts.

Building Blocks of Avocado Toast
In order to make THE BEST avocado toast, you’ll want to choose a really nice, hearty, sourdough bread. Sourdough bread has probiotic benefits and is easier to digest than bread made with conventional yeast.
I love the weekly rhythms of bread baking, and I use flour from Grapewood Farm. If you’re not a bake-your-own-bread kind of person, you can find great options for sourdough bread at grocery stores and bakeries and even online. Try to get a whole loaf so you can cut thick slices for your toast.
Avocados are full of healthy fats, great for digestion, and antimicrobial. To ensure your avocados are ripe, pair them with ripe bananas a day or two before, or leave them out at room temperature to ripen. To store your cut avocados for future use, you can press plastic wrap over the cut side of the avocado, press the cut side down into some chopped onion, or, the latest I’ve heard, submerge it in a jar of water to keep it fresh.
Once you have your bread toasted and avocado’d, you can add the remaining ingredients that really make this avocado toast sing. Chopped walnuts add more healthy fat and a good crunch, blue cheese adds some beneficial probiotics, and a sprinkle of flaky sea salt finishes it off.

Avocado Toast with Blue Cheese and Walnuts
Ingredients
- 1 slice sourdough bread
- 1/4 avocado sliced
- 1 tbsp blue cheese
- 1 tbsp chopped walnuts
- pinch crushed red pepper
- pinch flaky or coarse sea salt
- extra virgin olive oil optional, for drizzling
Instructions
- Toast bread. Slice avocado and place on top of toast. Evenly sprinkle walnuts and blue cheese over top. Finish with flaky salt, crushed red pepper, and optional extra virgin olive oil.
