Seasonal Simplicity

Sometimes the most delicious recipes are the simplest. Who has ever thought they didn’t like tomatoes, and then tried a fresh, in-season heirloom tomato? They may as well be different vegetables. (Fruits?)

Today I have for you a sandwich that isn’t much of a recipe, but it deserves attention. It’s tomato season, ya’ll. Don’t let it pass you by without making this sandwich.

Choosing Your Ingredients

Start with your freshest homemade sourdough, or a good stand-in from the store. Lather on some recently made homemade mayo, or use a store bought version that doesn’t use vegetable oils.

Next, sprinkle on some sea salt and freshly picked herbs. Slice your prize garden tomato (or one from the market) and layer it on top. It’s so good, right?

The end-of-summer sandwich everyone expects! Fresh, seasonal tomatoes pair beautifully with homemade mayo, salt, and your choice of herbs.

Ingredients
  

  • 1 large ripe heirloom tomato
  • 8 slices homemade sourdough
  • 1/3 cup homemade mayo or can sub store bought avocado mayo
  • 1/4 cup fresh herbs
  • sea salt to taste

Instructions
 

  • Slice the bread and spread with mayo. Lay herbs on top and sprinkle with salt. Top with another slice of bread and enjoy.
