Baked Sweet Potato

A longtime favorite

I can’t help but share another sweet potato recipe. It’s great winter food, you know? Sliced into medallions, eaten cold with a green salad or in sweet potato salad, or pureed in a creamy soup or a chunky stew. I like sweet potatoes any which way, and today I have a paleo version of baked sweet potato.

Healthy carbs

After a hard workout or a long run, I like to eat higher carb breakfasts such as this baked sweet potato or perfect overnight oatmeal. On weight lifting days or no workout days, I stick with higher protein breakfasts and lower carbs. All food finds a place in my diet, given the right circumstances.

Sweet potatoes are an excellent source of healthy carbs. Unlike highly processed foods or sugary pastries, sweet potatoes hit the sweet spot without going overboard. Not to say there is never a time or place to indulge, of course.

How to top it

I have had some really delicious baked sweet potatoes with lentils and feta, pulled pork, and bacon and cheese. This time I decided to make it more dessert like. I melted coconut oil into the split open potato. Then I sprinkled cacao powder, coconut flakes, cinnamon and walnuts. I finished with some frozen wild blueberries. The result was truly decadent. The sweetness of the sweet potato counter balanced the unsweetened cacao. The coconut oil and walnuts added richness, and the coconut flakes gave a slight crunch.
Other delicious toppings, both sweet and savory, could be yogurt and maple syrup, butter and herbs, peanut butter and cacao, or chili. No matter how you top it, a baked sweet potato is sure to find a rotation in your meal plan.
Baked sweet potato with sweet paleo toppings

Baked Sweet Potato

Serves 2

50 minutes

Ingredients
2 medium sized sweet potatoes, washed and scrubbed
1/2 cup frozen wild blueberries
1/4 cup walnuts
2 tablespoons coconut oil
2 tablespoons coconut flakes
1 tablespoon cacao powder
sprinkle of cinnamon
Directions
1) Preheat oven to 400 degrees. Wash and scrub sweet potatoes. Place directly on oven rack and bake for 45 minutes until fork easily pierces through to center.
2) Slice sweet potatoes evenly down the middle. Gently press the ends in towards the center to fluff up the insides a bit. Divide toppings evenly between sweet potatoes.
