Gratitude Series Part I

I’m starting a thankfulness series. Day 6 here in Spain of the quarantine, and gratitude makes a big difference. I am thankful for the beauty around me. There are flowering trees close enough to touch, and the morning light shining on the dew drops of this particular bloom made me catch my breath.

Hello everyone. Covid is still taking over the world whether we like it or not. We are getting through as best we can, but it’s hard when many aspects of life are not the way they used to be.

On day 6 of the lockdown here in Spain I started a gratitude series on social media. I would like to share it here, too, as some of you are not on social media. I will post eight days or so at a time until day 50. All of these gratitude posts are from during the strictest quarantine measures in Spain over March and April 2020. At the end of each post I will include some links to favorite recipes I have made recently. (Head below to link to two seafood stews and a buttery caper sauce.)

Day 7: I’m thankful for a fridge and pantry full of food. As strange and surreal as these times are, we do not lack anything. And, I’m thankful that it’s Spanish food!
Day 8: I am thankful for my firstborn. My Evelyn. She is creative, sensitive, kind, and sweet. She makes me coffee sometimes in the morning. She helps Lydia. She has good ideas. And she is the chief breakfast maker these days. I love her! And I’m thankful to be quarantined with her.
Day 9: I am thankful for work. Every day has it’s tasks. Dishes, meal prep, laundry, cleaning, parenting, exercising, studying, teaching. Although we can’t leave, we are not prisoners. We have goals to accomplish every day, and for that I am thankful.
Day 10: I’m thankful for my sweet Lydia. I say, “Hello, my sweet Lydia!” And she responds, “Hello, my sweet Mommy!” She is the comic relief in our family, always trying to make us laugh by being silly. She looks up to her big sister, loves her daddy, and loves to hear stories. Sometimes she rubs my back just to be nice. I love her so, and I couldn’t imagine our family without her.
Day 11: I am thankful that the sun rises each morning, and that I often get to see it. Each day is a gift; no day is guaranteed. Even though sometimes it feels a little bit like the movie Groundhog Day, I am still thankful for the sunrise. “This bright, new day… complete with 24 hours of opportunities, choices, and attitudes… a perfectly matched set of 1440 minutes.This unique gift, this one day, cannot be exchanged, replaced or refunded. Day 12: My gratitude list wouldn’t be complete without including my husband, Justin Kuk. We have been married for almost 12 years. He is a faithful husband, a good friend, and an excellent father. I appreciate his humor and his way of bringing out the best in me.
Day 13: I am thankful for homemade bread. I love using my sourdough starter to make homemade baguettes. Since I can’t go to my favorite café, I’ve had to recreate my order at home. A couple weeks ago, we were each sharing what we liked about the day. My answer was, “I liked eating bread.” Bread makes me happy!
