Instant Pot Whole Grain Rice with Chickpeas

A quick and easy way to make delicious, chewy brown rice with plump chickpeas and savory peanuts.

Method
 

  1. If soaking the rice ahead of time, combine brown rice with 4 cups filtered water and 1 tablespoon apple cider vinegar or lemon juice. When ready to cook, drain and rinse. If not soaking rice, just rinse.
  2. Chop onion and garlic. Choose "Sauté" on Instant Pot and add olive oil. Sauté for 5 minutes until soft. Add in remaining ingredients, except for apple cider vinegar, which will be added at the end.
  3. Lock lid, set vent to "seal", and choose manual pressure set to high. Cook for 10 minutes, allowing pressure to release naturally for 15 minutes.
  4. Stir in apple cider vinegar, and serve with greens.

Notes

The prep time in this recipe includes chopping the garlic and onions, sautéing them, and adding the remaining ingredients. The cook time includes the Instant Pot coming to pressure, a cook time of 10 minutes, and allowing pressure to release naturally for 15 minutes.
