  • Stand mixer or hand mixer

Method
 

  1. In a stand mixer using the whisk attachment, or in a large bowl using a hand mixer, blender together raw honey and egg yolks for 5 minutes until fluffy.
  2. Add milk, cream, vanilla extract, and lemon zest. Whisk until blended. Refrigerated for two hours until completely chilled.
  3. Pour into ice cream maker and churn according to manufacturers directions. If you don't have an ice cream maker, you can achieve pretty good results by freezing the mixture and stirring every 30 minutes for 4-5 hours.
