Overnight Apple Butter

An easy way to preserve a fresh apple harvest: apples are cooked down in a slow cooker with ginger and cinnamon to produce a truly decadent condiment.

Ingredients
  

  • 10 lbs. fresh apples I used Red Delicious
  • 1/2 cup real maple syrup
  • 1/4 cup apple cider vinegar
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves

Method
 

  1. Core apples and cut out any wormy spots. Slice into 1 inch pieces.
  2. Add apples, maple syrup, apple cider vinegar, cinnamon, ginger, nutmeg, and cloves to slow cooker. Cook on low for 8 hours.
  3. After 8 hours, uncover and continue cooking for 30 minutes to evaporate extra liquid. Puree with immersion blender, ladle into jars (leaving 2 inches space at the top), and refrigerate or freeze.
