Low Carb Chocolate Paleo Pudding

This delicious, low carb treat will satisfy your chocolate craving without wrecking your health goals.

Ingredients
  

  • 1 can full fat coconut milk 14 oz.
  • 1/4 cup + 2 tbsp. cocoa powder
  • 3 scoops chocolate collagen powder
  • 1 tbsp raw honey omit if you want a keto dessert
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • pinch salt
  • coconut flakes and cocoa nibs to garnish

Equipment

  • Blender or immersion blender

Method
 

  1. Warm coconut milk in saucepan over medium heat. Whisk in remaining ingredients.
  2. Transfer to blender, or use an immersion blender, to blend well.
  3. Divide into five ramekins, then chill for 3 hours. Garnish and serve.
