Chocolate Dipped Frozen Banana Pops

Enjoy a sweet summer treat any time of the year with these decadent, whole food popsicles.

Ingredients
  

  • 5 ripe bananas peeled and halved
  • 9 oz. dark chocolate chips (one bag)
  • various toppings, such as chopped nuts, coconut flakes, almond butter, cocoa nibs, etc.

  • popsicle sticks
  • Parchment paper

Method
 

  1. Line a baking sheet or tray with parchment paper. Peel bananas and break each one in half. Insert a popsicle stick into one end of the banana and lay on tray. Freeze for two hours.
  2. Prepare toppings in another tray or sheet pan. Chop nuts, sprinkle coconut flakes and nibs in a pile, etc., so they are ready for sprinkling.
  3. When bananas are frozen, melt the chocolate chips in a deep, narrow container (such as a 4-cup glass measuring jar). I used the microwave, heating for 30 seconds and then stirring in between until melted. You can also use a bowl over a pot of simmering water, stirring until melted.
  4. Dip each banana half into the chocolate, turning to coat, and then immediately sprinkle on the toppings of your choice. Place on tray and back in the freezer for 30 minutes to an hour. Store in resealable bag.
