Spring Pasta with Garlic Scapes and Chives

  • Boil a large pot of filtered water. Slice off bulb end from garlic scapes and thinly slice remaining stalks. Saute in 2 tablespoons of olive oil for 5 to 7 minutes.
  • When water comes to a boil, add salt. Pour in Einkorn pasta and stir. Set timer for 10 minutes to check. It may take up to 12 minutes to cook. Stir a few times throughout cooking.
  • Grate Parmesan cheese and slice chives. When pasta is finished cooking, reserve 1/3 cup of cooking water. Drain pasta in a colander and return to pot. Add lemon zest and juice, additional 2 tablespoons olive oil, and chives. Add pasta water if necessary to loosen pasta.
  • If serving hot, add Parmesan cheese now. If serving cold, let pasta cool and add cheese once cooled. Garnish with extra cheese and/or black pepper and chives.
