Servings 4 8 oz. giftable portions

Equipment

  • 2 large sheet pans

Ingredients

  • 8 cups dehydrated* or raw walnuts
  • 1/3 cup extra virgin olive oil
  • 1/3 cup fresh rosemary chopped
  • 4 tsp Celtic coarse sea salt or kosher salt
  • 2-4 tbsp real maple syrup
  • 2 tsp fresh ground pepper

Instructions

  • Start with soaked and dehydrated walnuts (see notes below) or use raw walnuts. Preheat the oven to 350 degrees Fahrenheit and set out two large sheet pans.
  • Measure just over 8 cups walnuts and pour onto the pans. Mix together remaining ingredients in a bowl and pour evenly over walnuts. Use your hands to mix it all together, ensuring that the oil mixture coats the nuts.
  • Bake for 12-15 minutes, stirring halfway through. (If you start with dehydrated nuts, the baking time will be shorter; raw nuts will take longer to bake).
  • Let cool on baking sheets, then divide into for quart sized bags for gifting, or store in an airtight container.

Notes
